Food Network 01/01/11 -- Chef Trey Foshee's reinvented "fish tacos" at California Modern caught the attention of HGTV Host Aaron Sanchez, who featured the unique dish on "The Best Thing I Ever Ate."

The Food: Trey Foshee crafts seasonal dishes in line with the Monterey Bay Aquarium’s list of sustainable seafood. Favorites include ancho chile shrimp tacos with mango salsa and jalapeño-lime crème fraîche ($13).

Tip: There’s not much to see once darkness falls, so come for brunch or an early dinner. Keep an eye out for dolphins, seals, and, from January through March, the added treat of migrating whales.

It's a little like the chicken-and-egg conundrum: Would Trey Foshee of George's at the Cove be the same chef without Chino Farms? Would the extraordinary produce the Chinos grow taste so profound in someone else's hands?

This much is clear: Together, the chef and the farmer create sublime moments in George's formal Ocean View Room, which recently underwent an elegant face lift for its 20th birthday. Consider the beyond-succulent prime short ribs with mustard greens and spring onions; the beautiful ragout of spring vegetables with troll-caught king salmon; and an anything-but-ordinary carrot cake with candied Chino carrots. From the "Chino Farms Vegetable Preparations" on the menu, you can order roasted new potatoes "unearthed this morning" and the sweetest white and yellow corn on the planet — and you should. San Diegans have always thought of George's as the city's big-deal restaurant. Now that the food soars, it really is.

AAA Four Diamond Award
(2001-2010) George's California Modern received the 2010 AAA Four Diamond Award for its tenth year, one of only 32 restaurants in Southern California. "North America's AAA Diamond Rating System is a long-time trusted method of rating lodgings and dining establishments," said the Auto Club's Approved Accommodations Supervisor Patricia Marenco. "Southern California's hotels and restaurants that earn the AAA Four Diamond award maintain a very high standard of service in their hotels and restaurants in order to continue pleasing their guests."
