On a recent episode of "The Best Thing I Ever Ate" on Food Network, Aaron Sanchez had this to say about the fish tacos at California Modern—"They have taken the whole fish taco concept and taken it to the next level...best reinvented classic I've ever had."
Wondering what makes these "fish tacos" different? Trey takes pieces of buttery, raw yellowfin, dusts them with crushed corn nuts and wraps these little "tortillas" around diced tuna tartare, then places them on fried pieces of California Avocado with a cool creme sauce.
