FOOD&WINE Presents: California – Always In Season


As part of a new FOOD&WINE series* focused on California-grown specialty crops, Chef Trey recently joined growers Mike Sanders and Chris Ambuul to tour the verdant, blossoming avocado groves of Rancho Santo Tomas in Valley Center and cooked a light, healthy alfresco lunch showcasing the quintessential California fruit. Sanders helped pioneer the avocado industry nearly 40 years ago when he transformed untamed brushland into irrigated orchards using machetes, pick axes and hammers.

Today, San Diego County is considered the Avocado Capitol of the U.S. producing nearly 40% of all the avocados grown in California, which produces 90% of the nation's avocado crop.
