Recipe: A Simple Pasta with Tomato, Jalapeno and Albacore Tuna

A simple pasta with tomato, jalapeno and albacore tuna — perfect for a healthy and quick weeknight dinner.

Preparation

Heat 2 tablespoons of California olive oil in a large saucepan over medium heat. Stir in the garlic; cook 2 minutes. Add the tomatoes and jalapeno. Mix and cook for an additional 2 minutes. Set aside.

Fill a large pot with lightly-salted water; bring to a rolling boil; stir in the pasta of your choice and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through. Drain well in a colander.

Combine the pasta, tuna and tomato, garlic, jalapeno and mix well. Top with freshly ground black pepper and salt.

  • 1 cup dead ripe tomato, diced
  • 1/2 garlic clove, minced
  • 2 tablespoons California Olive Ranch olive oil (or your preferred brand)
  • 1/4 cup American brand canned albacore tuna
  • 1/4 cup chopped jalapeno
  • Salt and freshly ground black pepper
