This is the third time I have gone to Star Chefs, which is a three-day event of demonstrations and speakers from the culinary world. The last two times had some great topics and I came away with a head full of ideas. Not food ideas, but ideas and thoughts about the restaurant industry as a whole and how we fit into it. Confession: I was beyond elated when Trey told me he was taking me with him to Star Chefs Congress in New York City. This year’s theme – What is American cuisine? – offered an opportunity for me, being Asian American, to think about where I fall in American food culture? Who am I as a pastry chef? How do my desserts translate in the minds and palates of others?
