The Road to Galaxy Taco

The Road to Galaxy Taco

"Part of the process of developing a new restaurant concept is being exposed to what others are doing. I have a clear vision for Galaxy Taco—what I want the menu, decor, music, style of service and bar program to be—but it always helps to see what people you respect in the industry are doing."

Spring Break 2013: Nashville & Memphis

Spring Break 2013: Nashville & Memphis

The South and Midwest are always tempting to me for a bunch of reasons, BBQ being one of them. So this year for spring break, instead of Mexico or Hawaii, I offered the family a trip to Nashville and Memphis. Not really knowing what they were in for, everyone agreed.

Year-End Visit to Los Angeles: Sotto, Providence & Other Memorable Meals

It gets very busy around here at the end of the year. Taking on the Bay Area with Jason Knibb

Taking on the Bay Area with Jason Knibb

I just got back from a very quick eating trip to Los Gatos and San Francisco with Jason Knibb (of Nine-Ten). We flew up Friday afternoon and drove straight to Los Gatos for dinner at Manresa. I have wanted to eat year for a couple years and finally made it. What is interesting about San Francisco, a truly great food city, is how it is branching away from its predominantly Mediterranean/Italian vibe to a city with many different inspirations.
