San Diego on a Plate: Venison Loin with Chino Farms Beets


At George's California Modern, our passion is telling the San Diego story through food. Locally sourced, seasonal ingredients are the heart of our kitchen. This month, we're particularly excited to highlight our venison loin with Chino Farms beets. Tender and rich, venison is a great vessel to showcase our locally grown beets that are at their peak sweetness and earthiness during this time of year. The kumquat jam is fragrant and robust as citrus is so perfect right now in Southern California. San Diego in particular is one of the country's best citrus growing regions and we're incredibly lucky to reap the benefits of the local harvest in our kitchen. We finish the dish with a sauce of roasted venison bones and cocoa nibs which ties in harmoniously with the citrus and beets.
