Roast suckling pig has been a delicacy since ancient times, and is usually prepared for special occasions and gatherings. So when a good friend of mine said she was bringing in a group of 10 friends for dinner a few months back, and I happened to have an extra suckling pig available, I offered it up to her. She thought it sounded fun, and as it turned out her party had a great time.
We’re now offering whole suckling pig dinners for groups of eight to 10 people in California Modern. A suckling pig is really tender and succulent, and the skin gets very crisp. We present the roast pig tableside, then carve it in the kitchen and serve it with a variety of seasonal side dishes and sauces, along with a salad to start the meal.
